The 9th, 'Teapot and Tea Things Tuesday':

Welcome to our  9th, Teapot and Tea Things Tuesday!

Last week was so fun, don't you think?

Bouquet picked from the nature path behide our home

I was so thrilled that so many of you wanted share a 'special-tea' moment with us. I am amazed at the artistc flair you all have and the heart-felt memories that you share.

Thank you to those who left wonderful, kind comments.  It is so encouraging to a "newbie" like me.  I will be follwing up as soon as I can.  Welcome to our new Followers. I am looking forward to getting aquainted with you.

Its time to enjoy the lazy, hazy days of summer. Kick off your shoes. Feel the green grass on your bare feet. Stretch out on a blanket under the tree and relax as I pour the tea.

With the long weekend approaching for both sides of the border I have given a more casual look to my tea table.

In character, in manners, in style, in all things, the supreme excellence is simplicity

I selected a set of JOHNSON BROTHERS desert plates.
I have a set of six, in different colours.
I search through my china cabinet for a cup and saucer to compliment each.
Success with 5 colour schemes and I will use the sixth to serve "Lazy Daisy Cake"

When I need to keep things simple  I go back to recipes I am comfortable making and are delicious.
This is actually the first cake I ever made on my own.  When I was about 13 years old.  Most of you are probably familiar with it.   For me this is a K~I~S~S~E~D recipe.

LAZY DAISY CAKE

INGREDIENTS:

2 eggs
1 cup sugar
1 teaspoon vanilla extract
1 cup cake flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
2 tablespoons butter or margarine

TOPPING:
3/4 cup packed brown sugar
1/2 cup butter or margarine, melted
2 tablespoons light cream (milk will work in a pinch)
1 cup shredded coconut

DIRECTIONS:

1.In a large mixing bowl, beat eggs, sugar and vanilla on high until thick and lemon-colored, about 4 minutes. 2.Combine flour, baking powder and salt; add to egg mixture. Beat on low just until combined.
Heat milk and butter in a small saucepan until butter melts. Do not boil.
Add to batter; beat thoroughly (the batter will be thin).
Pour into a greased 9-in. square baking pan. Bake at 350 degrees F for 20-25 minutes or until cake tests done. Cool slightly.

For topping, blend all ingredients well; spread over warm cake. Broil about 4 in. from the heat for 3-4 minutes or until the top is lightly browned.

Tip
Poke holes in the cake prior to broiling to allow some of the gooey goodness to seep in even deeper!!

I had never thought of this before but it sounds delish....
"This is great! fluffy, sweet, delicious! I've made it dairy free also, by substituting coconut milk for the moo, and oil for the butter. I also like a creamy coconut custard for the topping, use the rest of the can of coconut milk and heat it with sugar and a tbsp of cornstarch! sivv it if its a bit lumpy, but its PERFECT! I can't believe its so EASY!" by jovialj
